Collard Rolls – Delicious, Nutrient dense, CLEAN and LOW Calorie

These are one of my favorite things to eat – they come up to about 75 calories each roll if you make them the way I did exactly. They are Super nutrient dense, clean, have protein, good fat and clean slow carbohydrate, vegan and gluten free nad full of antioxidants (if you use heirloom rice). 

 

COLLARD WRAPS RECIPE:
 
  • Organic Collard Leaves (1 Bunch or more depending on your need)
  • 1 Can Trader Joes canned Black Beans
  • 3 Mini Sweet peppers (organic is best – these are a highly sprayed crop)
  • 1 Avocado (cut into little cubes)
  • 1/4 Chopped Red onion
  • 1/4 cup Rice (I used Chinese Forbidden or “Heirloom” rice but you can use brown rice or Farro!)
  • 1 cup Cilantro (organic is best here as well)
  • 1 Lime
  • 1/2 teaspoon coconut oil
  • Sea Salt (I use Pink Himalayan)
Bring a large Pot of water (Stock pot) to a boil – then turn down to a low setting just enough to keep the heat going. 
Cook your rice (I used “Black Heirloom” or ‘Chinese forbidden rice”, you can use this, Brown Rice, Farro or Quinoa!)
 
While water is getting to a boil, and rice is cooling, rinse/clean collard leaves thoroughly and cut off stems. 
 
Take collard leaves one by one and give them each a bath in the stock pot (until they just start to relax a little – about 1-2 minutes max). Once they are complete you can stack them on top of each other on a plate to let cool. (SET ASIDE)

FILLING:
 
Chop up filler veggies (Cilantro onion, peppers, avocado) and put all veggies together in a bowl (SAVING THE AVOCADO FOR LAST). 
Add rice and 1 can of black beans to the filling mixture.
Add 1/2 tablespoon of coconut oil to the mixture (optional but it gives it this awesome Caribbean flavor if you do it!)
Take the juice of 1 entire lime; squeeze into mixture.
add Sea Salt and stir

ASSEMBLY:
 
This part is easy – wrap them exactly how you wrap burritos! Add the avocado last – That’s it. Add a little mixture to the center of collard leave tuck and roll.
 
If you follow this recipe exactly – they are about 75 calories per wrap, 150 calories per serving (2) and this serves 4 people (about 8 Collard rolls total). So to make more just double it. They are clean and healthy so eat till you are full :). Enjoy your meal – plate it beautifully, eat Consciously!
