This was delicious – we all know that Kale is a super duper food, and farro is another one! Cook it just like you cook rice then set it aside
- Italian Farro
- olive oil
- Mushroom (baby bella or crimini)
- Sea Salt
- Tomato and basil (garnish/optional)
- Red Onion
Slice and Saute Mushrooms with olive oil, onion, garlic and sea salt, once soft – add kale and saute until wilted.
Stir entire mixture into Farro and squeeze 1/2 lemon (or to taste) and garnish with fresh chopped basil and tomato.
Well under 200 calories for a serving (1 cup serving), probably closer to 175 calories.
That’s it – this is DELICIOUS and of course clean. Enjoy!
